Healthy recipe with vitamin A and all the essential nutrients to enhance your bone and others. You can have this soup for lunch or dinner with or without rolls..
Ingredients for 2 servings:
1 medium-size yellow squash.
1 tbsp olive oil.
1/2 tsp nutmeg.
1/2 tsp salt.
1/2 tsp ginger (optional).
Directions:
Cut squash into two, rub 1 tbsp of olive oil on both squashes, put the squash face down in a baking tray, and bake for 45 minutes on 350°..
Remove the squash from the oven, scope into a blender, and add nutmeg, ginger (optional), salt, and chilli (optional)..
Blend until it has a creamy consistency. Season to taste and serve..
This could be prepared for use on a different day either to save time or as leftovers..
